Noel's Fudgy Brownie

Noel's Fudgy Brownies


1 cup(5oz) - Semisweet Chocolate, 60%-72% cocoa content
10 Tblsp(5oz) - Unsalted Butter
---------------------------
3 eggs(5oz) - Eggs
1 1/4 cup(9oz) - Sugar
1 1/2 tsp - Vanilla
Pinch - Salt
---------------------------
3/4 cup(4.5oz) - All purpose flour


Instructions:
1) In a double boiler melt the chocolate and butter together until completely melted and combined.  Immediately, when the butter and chocolate have melted together, take the bowl off the heat and set aside.
2) In a separate bowl whisk together the sugar, eggs, vanilla, and salt.
3) Add the chocolate/butter mixture to the sugar/egg mixture in 4 different stages.  Every time you add the chocolate/butter mixture whisk together with the sugar/egg mixture until fully combined and then add the next stage.
4) In a separate bowl measure out the flour.
5) Add the flour to the batter mixture in 3 stages. Fold in the flour with a rubber spatula until fully combined. Batter is now finished.

 
Bake at 325 degrees F in and 8x8 pan for roughly 35-40 minutes.  Brownies are done when a knife can be inserted into the middle of the brownies and come out dry/clean.

Noel's Chocolate Chips Cookies

Ingredients:
2 1/4 sticks(8.8oz) - Unsalted Butter
3/4 cups(6.5 oz) - Sugar
3/4 cup(6.5 oz) - Brown Sugar(compacted)
---------------------------------
2 - Large Eggs
1 tsp - Vanilla Extract
---------------------------------
2 1/2 cups(13.5oz) - All Purpose Flour
1 tsp - Baking Soda
1 tsp - Salt
---------------------------------
12 oz - Semisweet Chocolate Chips



Instructions:
1) With a mixer, cream together the butter, sugar, and brown sugar.
2) Add the eggs one at a time to the butter/sugar mixture and then add vanilla.
3) Mix together the flour/baking soda/salt with a whisk and then add to the butter/sugar/egg/vanilla mixture in 3 stages until fully incorporated.
4) Lastly, add the 12 oz of semisweet chocolate chips. 
-Makes a dozen large cookies. 

Bake at 375 degrees for 15-20 minutes
